Potato and Cabbage Soup

This is one of our favorite soup recipes!
The amount of ingredients is more than
enough to feed our whole family,
so preparing half, or even a fourth might
be more suitable for your family.

Ingredients:
4 cups water (step 1)
4 chicken bouillon cubes (step 1)
3 cups diced potatoes (step 2)
1 cup finely diced onion (step 2)
1/2 cup diced carrots (step 2)
6 cups chopped cabbage (step 3)
1 cup chopped celery (step 3)
1 TBS minced garlic (step 4)
1 ts salt (step 4)
1 ts dill weed (step 4)
1 cup butter (step 5)
1 cup flour (step 5)
2 cups milk (step 6)
2 cups chicken broth (step 6)
1/2 jar cheese dip (I get the 15 oz jars from Aldi's) (step 6)
1/2 tsp dried thyme (step 6)
pepper
add more milk or water if desired

Step 1:
In a large soup pan, add above ingredients,
bring to a boil.
Step 2:
Add above ingredients, bring to a boil,
as you continue to stir.
Step 3:
Add above ingredients, boil and stir,
until veggies are tender.
Step 4:
Add above ingredients.
Continue to cook until next step is ready, low-medium.
Step 5:
In another pan, melt butter, then add flour (medium heat),
stir until brown.
Step 6:
Slowly add milk and broth,
then the rest of above ingredients in step 6,
stir until cheese is melted,
then add to the first pan, this is a very creamy soup,
so to make it less creamy, add milk or water.

Easy Hamburger Casserole

1 lb Hamburger (cooked)
1 can beef broth
1 jar of beef gravy
chopped potatoes, or cooked noodles
your choice of vegetables (corn, peas, green beans)

Mix together in a casserole pan, cook at 375, 30 mins+, depending on your oven.
Stir 1-2 while cooking.

Apple Dumplings with Streusel

Dumpling:
6-8 pie crusts.
Egg white.
Butter.
6 cups chopped-peeled apples.
1/2 cup sugar.
1 TBS cinnamon.

Spray baking sheet. One at a time, lay pie crust on sheet.
Mix apples with the sugar and cinnamon. Brush inside of pie crust with egg white.
Spoon apples into center of pie crust.
Cut about 1tsp of butter and lay on top of apple.
Close pie crust.

STREUSEL:
1/3 cup packed brown sugar
1/3 cup all-purpose flour
2 tablespoons plus 1-1/2 teaspoons butter, melted


In a small bowl, combine the streusel ingredients.
Brush remaining egg over dumplings; press streusel over tops.

ICING:
1 cup confectioners' sugar
2 tablespoons 2% milk
1 teaspoon vanilla extract

Bake at 400° for 14-18 minutes or until golden brown.
Place pans on wire racks.
Combine icing ingredients; drizzle over dumplings.

Stuffed Mushrooms w/ Sausage and Mozzarella

Ingredients:
  • 1 pound (about 24) large fresh white mushrooms, cleaned
  • 2 tablespoons olive oil, divided
  • 6 ounces bulk Italian sausage
  • 3 green onions, sliced (about ½ cup)
  • 1 teaspoon chopped garlic
  • ½ teaspoon Italian seasoning
  • ½ cup mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
Directions:
Preheat oven to 400°F. Remove stems from mushrooms; finely chop enough stems to equal ½ cup and reserve. Place mushroom caps in a bowl and toss with 1 tablespoon oil. Arrange caps cavity side up on a shallow baking pan and set aside. Heat remaining oil in a medium skillet over high heat. Add sausage, green onion, garlic, Italian seasoning and reserved chopped mushroom stems. Sauté, breaking up sausage into smaller pieces, for about 5 minutes, until cooked through and nicely browned. Remove from heat; add both cheeses and stir just until cheese melts. Stuff mushroom caps with sausage mixture and bake 10 to 15 minutes, until mushrooms are tender and cheese is slightly golden.

Chris D's Layered Bean Dip

Ingredients
2 (16oz) cans of refried beans
1 C. salsa (medium or hot)
1/2 medium onion, finely chopped
3 clove garlic, finely chopped
1 (4oz) can of diced jalapenos (mild or hot)
2 (8oz) box of cream cheese
1/2 C. sour cream
1/3 C. mayonnaise
1 rounded tsp. garlic powder
1 rounded tsp. onion powder
2 bags grated cheese

Prep
Mix beans, salsa, chopped onion, chopped garlic, and jalapenos. Spread evenly in a 9x13 baking dish. Cover with one bag of grated cheese. Combine cream cheese, sour cream, mayonnaise, garlic powder, onion powder. Spread evenly on top of grated cheese. Add additional bag of grated cheese. Bake at 350 for 20-25 minutes. Serve with tortilla chips (or hotdogs).
